What is Dojo?
Dojo means "training place." At Dojo Gelato, we practice the art of gelato every day — in the hopes of bringing you the most delicious and fresh ice creams possible.
What is gelato and sorbetto?
Gelato is Italian-style ice cream (in Italian, gelato means "frozen"). Compared to American-style ice cream, gelato uses more milk and less cream. As a result, gelato is lower in fat than other premium ice creams. Typically, ice creams have between 16%-30% fat, while gelato has around 2%-10% (depending on the flavor).
Although gelato has less cream than other premium ice creams, it is denser and creamier. This is because gelato contains less air, or "overrun." Overrun is a measure of the volume of air churned into ice cream as it mixes. The overrun in gelato is low, around 20%. Premium-style ice cream can be as high as 50% overrun.
Gelato is also served at a slightly higher temperature than American-style ice cream. This naturally helps to intensify the flavors.
Even though it is dairy-free, Italian-style sorbet (sorbetto) is just as creamy and dense as gelato because it, too, contains low overrun. Sorbetto contains just three ingredients: fruit, water, and sugar. We prepare our sorbetto in the traditional way, using seasonal ingredients and fresh fruit juice. Since sorbetto has no dairy, it is fat-free.
